Healthy Travellers | Easy made popsicles

Summer is on its way, which means it’s almost time to sit on the porch with friends and eat popsicles together! Being a bit of a health nut, I’d rather not give my travel buddies frozen sugar water on a stick as a snack. But I’m also not about to deny them one of the simple pleasures of summertime.

Luckily, there’s no rule saying popsicles can’t be healthy as well as fun! When you make your popsicles with Complete Vanilla, each one will be full of protein, fiber, vitamins, minerals, and antioxidants.

 

Here are three healthy popsicle recipes we’ll be making before summer’s over. They are easy to make at home or when you are staying in a hostel with a freezer. Plus a pro tip:  You can also serve these as a healthy breakfast treat! Who said breakfasts are boring?!

Red – White – Blue Popsicles

 

Ingredients – Makes 6 popsicles

  • 2 scoops (1/2 cup) French Vanilla Complete by Juice Plus+ shake mix
  • 2 cups plain yogurt, for a vegan version, try coconut, almond, cashew, or pea protein yogurt
  • 1 cup strawberries, chopped into small pieces
  • 1 cup blueberries
  • Optional: For extra sweetness, you can add a dollop of honey or a pinch of stevia

In many flags around the world you will find the colours red-white-blue; so you can call this a patriotic popsicle if your flag matches these colours. I am Dutch so for me this definitly can be a home-winning popsicle.

 

How to make this red-white-blue popsicle: The trick to keeping the fruit suspended in the yogurt is to mix Complete Vanilla by Juice Plus+ in by hand, rather than using a blender. This makes a thicker base that keeps the pieces of fruit spread throughout the popsicle. It also reduces the yield when compared to other recipes, as the yogurt is more dense.

 

Mix Complete into the yogurt with a fork. Then fold the berries into the mixture and pour into popsicle molds. Freeze for at least three hours.

Peaches and Cream Popsicles


Ingredients – Makes 12 popsicles

  • 2 scoops (1/2 cup) French Vanilla Complete by Juice Plus+ shake mix
  • 1 1/2 cups plain yogurt, for a vegan version, try coconut, almond, cashew, or pea protein yogurt
  • ½ cup peach juice
  • 2 cups fresh peaches, chopped
  • Optional: For extra sweetness, you can add a dollop of honey or a pinch of stevia

In the summer when fresh, juicy peaches are available at the farmers’ market, it can be hard not to go overboard and buy more than you can store in your fridge. (Or is that just me?) Either way, these peaches and cream popsicles are full of fresh peach flavor.

Mix all ingredients in a blender and pour into popsicle molds. Freeze for at least three hours.

Mocha-Almond Popsicles


Ingredients  – Makes 8 popsicles

  • 2 scoops Dutch Chocolate Complete by Juice Plus+ shake mix
  • 1/2 cup milk or your favorite milk substitute like almond, coconut, hemp or cashew milk
  • 1 1/2 cups brewed coffee
  • 2 bananas
  • 1/2 cup almond butter
  • Optional: For extra sweetness, you can add a dollop of honey or a pinch of stevia

This will be a summertime success. If you don’t like the cafiene, you always can use decaf coffee. Mix all ingredients in a blender and pour into popsicle molds. Freeze for at least three hours.
